The Story Behind the Spoonful of Chef Will Horowitz
When it came to selecting the ingredients for his Spoonful, Will Horowitz wanted to truly represent how he works with food. "I wanted it to represent the way we appreciate every last scrap of what we use in the kitchen and be a portrait of the foraged ingredients and spices native to where we are and which make us most excited!"
Plated with ingredients such as smoked goat vertebrae and dried black trumpet mushroom is the spoon he has had since he was a teenager. "It was given to me by a chef I looked up to when I first began to cook." Well weighted and simply designed, this spoon has accompanied Horowitz around the world and through multiple restaurants. "Food is where I keep my memories," says Horowitz.
