Jillian Vose is beverage director at one of the world’s best bars—and has the awards to prove it. Vose has elevated cocktail design to an entirely new level, often taking inspiration from the culinary arts when it comes to formulating new cocktail recipes. "My approach to cocktails has a backbone of the classics with a culinary influence. Dishes, desserts and culinary techniques are now very common in cocktails," Vose says.

Vose chose to plate the ingredients for one of her masterpieces alongside a "trident", which is a combination spoon and fork. "This particular cocktail means a great deal to me, because it was one of the first drinks I made for a Dead Rabbit menu," Vose says. "I think of a spoon as utensil I use to delicately mix flavors together and dilute a drink to the ideal temperature. As my career and skill grew, I was more keen to use spoons that would make my technique more fluent—ones that were weighted and had a tighter spiral on the grip."
