The Story Behind the Spoonful of Chef Gavin Kaysen
Chef Gavin Kaysen worked across Europe and New York City before returning home to Minneapolis to open his celebrated New American restaurants. There, he says food does not affect his life—food is his life.
"I stole it from my pastry chef in Switzerland," Kaysen shares of his favorite spoon with a mischievous grin. "It means more to me than any other tool I have. It was the start of my culinary journey." While it first taught him how to perfect the ice cream quenelle, it now unfailingly follows to stations both sweet and savory. Kaysen finds inspiration in many ingredients, and his spoonful tells the story of the journey he has taken to where he is today: a Michelin starred chef and restaurant owner who has represented the United States in the exclusive Bocuse d’Or gastronomic competition—the Olympics of the chef world—since 2007.
