The Story Behind the Spoonful of Chef-Owner Edi Frauneder
This silver spoon, received from a friend who has since passed away, lives in Edi Frauneder's chef coat pocket. Thanks to its shape, weight, dimension, and material, Frauneder sees it as an elegant and universal tool. "I love it for its shape. It makes the perfect quenelle and has the ideal proportion."
The fall season was Frauneder's primary inspiration for his Spoonful, with each ingredient uniquely prepared. "I tried to incorporate all the cooking methods that I love using: pickling, dehydrating, frying, searing, boiling and roasting." Austrian-born Frauneder, chef-owner of multiple New York City restaurants, believes that everyone shares a similar love of food. "One spoonful can be very nourishing and fulfilling."
