The Story Behind the Spoonful of Chef Danny Mena
When it came to creating his Spoonful, chef Danny Mena immediately reached for this spoon, which was originally his great-grandmother’s. "It is ergonomically perfect for cooking," say Mena of his favorite utensil. It is most often found in the sink, waiting to be washed.
The ingredients Mena selected were equally self-evident. "We did ingredients that not only are my favorites, but also ones that are challenges I overcame when cooking, as well ones that signify the idea of using all of the animal and the pleasures we can receive from these lesser appreciated cuts, like bone marrow." They all come together in a way that represents Mena’s style of cooking: rustic with elegant and thoughtful touches.
