The Story Behind the Spoonful of Chef Chris Ford
Pastry chef Chris Ford’s favorite spoon is this beautiful vintage Oneida print that has stood the test of time with character and grace. "The spoon is a symbol of my craft," Ford says. "It helps me flavor, craft, build and drive my creations. This particular spoon is special to me as I use it mostly for quenelling, which is the art of scooping ice cream into a perfect form."
Ford is driven by a passion to avoid repeating himself, constantly evolving his craft. The perfect lines of the spoon juxtaposed with the organic ingredients represent what Ford considers to be a perfect marriage of form and abstract shapes. "It was a beautiful summer dish we were doing at the time, a fusion of blackberry and basil in a parfait format," he recalls of the inspiration for his Spoonful.
