The Story Behind the Spoonful of Chef Andrew Valenzuela
It doesn't get much simpler than dried corn and chilies. "These are the ingredients I have used my whole life—not just for my culinary career but when I was growing up, too," says chef Andrew Valenzuela. "These are the ingredients my family used and taught me how to use. Without that basic knowledge and passion for food being taught to me at a young age, I wouldn't be the chef I am today."
The intricate spoon Valenzuela favorites came to him in a reversal of many chef-spoon relationships: it was given to him by a former student rather than a mentor. "I keep it to remind myself that no matter where I am, I should remember how I started," he says.
