The Winter Beet – Gin Cocktail
2 oz Botanist Gin
2 oz Beet Juice
1/2 oz Lemon Juice
1/2 teaspoon Demerara Syrup (2:1)
4 oz Prosecco or Champagne
1 Shake gin, simple syrup, lemon, and beet juice in a cocktail shaker with ice.
2 Strain into a highball glass.
3 Top with bubbles and garnish with beet slices
Served over a collins ice cube or several cubes of ice.
