Chris Ford’s Spoonful Story
Pastry chef Chris Ford’s favorite spoon is this beautiful vintage Oneida print has stood the test of time with character and grace. “The spoon is a symbol of my craft. It helps me flavor, craft, build and drive my creations. This particular spoon is special to me as I use it mostly for quenelling, which is the art of scooping ice cream into a perfect form.” Regardless of whether he’s working or not, food is all encompassing for Ford. This passion drives him to avoid repeating himself when crafting dishes, like the one his spoonful is based on. “It was a beautiful summer dish we were doing at the time, a fusion of blackberry and basil in a parfait format.” The perfect lines of the spoon juxtaposed with the organic ingredients represent what Ford considers to be a perfect marriage of form and abstract shapes.
Ingredients: Strawberry sponge cake, basil sponge cake, strawberries, basil seed, blackberries, poached rhubarb, vanilla meringue and edible flowers
What are the “Spoonfuls of Inspiration”
Among chefs there is one universal truth: each has a favorite spoon. Whether wooden, metal, porcelain, plastic, or bone, chefs use this indispensable tool to measure, stir, flip, fold, divide, carry, plate, and – most importantly – to taste. Most chefs will tell you that their favorite spoon is an extension of themselves, an appendage without which they would be hard-pressed to survive.
Brent Herrig’s Spoonfuls of Inspiration series captures the unique emotional connection between chef and spoon. Created in collaboration with the chef, these abstract portraits showcase their favorite spoon alongside the ingredients and elements that inspire them. Here you’ll find a selection of Spoonfuls of Inspiration representing chefs, bartenders, and baristas from around the globe.
