Chef Marcus Samuelsson has racked up awards and accolades over the course of his career: the youngest executive chef ever to receive a three-star review from The New York Times, winner of Chopped All-Stars and Top Chef Master, and five James Beard Awards, among others. He now owns more than 30 restaurants around the globe.
With this kind of success, you might expect a certain level of self-importance. But Samuelsson remains grounded in his history and community, both of which shine through in his spoonful.
“This spoonful shows my journey around the world and with food. It’s set on a plate with an image of the Apollo Theater, which is, of course, an icon of Harlem, my home, and community. I’m always chasing new flavors, but also rely on the foundational, familiar flavors of my upbringing like berbere from Ethiopia or lemon and dill used in Scandinavian cooking.”

Ingredients: Nasturtium leaves, Ethiopian coffee beans, whole, and dried berbere pepper, grilled lemon, dill, Maldon salt, and cultured butter.
