Chika Tillman’s Spoonful Story

Chika Tillman’s New York City restaurant serves three-course dessert tasting menus and nothing else, so featuring ice cream in her spoonful is perfect. When plating her spoonful, Tillman let her favorite color, green, shine through. She prepared more than a half dozen ice creams in various shades of green for the photo shoot, ultimately selecting the four shown here from darkest to lightest in color: basil, celery, lime and Granny Smith apple. “These made me happy by color and flavor.”

Her philosophy when cooking? “I let ingredients talk.” She uses only all natural, fresh ingredients, which she manipulates as little as possible. Owning the spoon was a happy accident: Tillman received it by mistake in an order from an Italian supplier. In her opinion, it is the perfect tone of green, so she hung on to it.
