Will Horowitz’s Spoonful Story
When it came to selecting the ingredients for his Spoonful, Will Horowitz wanted to truly represent how he works with food. “I wanted it to represent the way we appreciate every last scrap of what we use in the kitchen and be a portrait of the foraged ingredients and spices native to where we are and which make us most excited!” Plated with ingredients such as smoked goat vertebrae and dried black trumpet mushroom is the spoon he has had since he was a teenager. “It was given to me by a chef I looked up to when I first began to cook.” Well weighted and simply designed, this spoon has accompanied Horowitz around the world and through multiple restaurants. “Food is where I keep my memories,” says Horowitz.
Ingredients:Smoked goat vertebrae, sumac, maple aged mussels, juniper, black birch, smoked fermented cream, dried shrimp, juneberry, dried black trumpet and kelp
What are the “Spoonfuls of Inspiration”
Among chefs there is one universal truth: each has a favorite spoon. Whether wooden, metal, porcelain, plastic, or bone, chefs use this indispensable tool to measure, stir, flip, fold, divide, carry, plate, and – most importantly – to taste. Most chefs will tell you that their favorite spoon is an extension of themselves, an appendage without which they would be hard-pressed to survive.
Brent Herrig’s Spoonfuls of Inspiration series captures the unique emotional connection between chef and spoon. Created in collaboration with the chef, these abstract portraits showcase their favorite spoon alongside the ingredients and elements that inspire them. Here you’ll find a selection of Spoonfuls of Inspiration representing chefs, bartenders, and baristas from around the globe.
