Eduard Frauneder’s Spoonful Story
This silver spoon, received from a friend who has since passed away, lives in Eduard Frauneder’s chef coat pocket. Thanks to its shape, weight, dimension and material, Frauneder sees it as an elegant and universal tool. “I love it for its shape. It makes the perfect quenelle and has the ideal proportion.”
The fall season was Frauneder’s primary inspiration for his spoonful, with each ingredient uniquely prepared. “I tried to incorporate all the cooking methods that I love using: pickling, dehydrating, frying, searing, boiling and roasting.” Austrian-born Frauneder, chef-owner of multiple New York City restaurants, believes that everyone shares a similar love of food. “One spoonful can be very nourishing and fulfilling.”
Ingredients: Smoked duck breast, squash puree, pumpernickel, dehydrated kale, pickled beech mushroom and peas shoots
What are the “Spoonfuls of Inspiration”
Among chefs there is one universal truth: each has a favorite spoon. Whether wooden, metal, porcelain, plastic, or bone, chefs use this indispensable tool to measure, stir, flip, fold, divide, carry, plate, and – most importantly – to taste. Most chefs will tell you that their favorite spoon is an extension of themselves, an appendage without which they would be hard-pressed to survive.
Brent Herrig’s Spoonfuls of Inspiration series captures the unique emotional connection between chef and spoon. Created in collaboration with the chef, these abstract portraits showcase their favorite spoon alongside the ingredients and elements that inspire them. Here you’ll find a selection of Spoonfuls of Inspiration representing chefs, bartenders, and baristas from around the globe.
